Everybody loves dips: you can eat them with anything and take them anywhere. My parents and I were about to embark on a 10 hour drive to Alexandria for my cousin’s wedding. Knowing how much stopping irritates my dad, I decided to make some munchies for the road. Not wanting to buy new stuff (nor waste anything we already had), I searched the fridge and cabinets, and found the perfect ingredients for a rich and savory dip. This blue cheese and pecan dip is amazing with crackers, pita, and veggies, and is an easy way to jazz up your next party. Enjoy!
Prep time: 1 minute
Cook time: 2 minutes blending time
- 2 ounces/ 50 g blue cheese
- 1/2 oz pecans
- 1 tbsp olive oil
- 1/8 red pepper, finely chopped
- 1 tsp balsamic vinegar
- 2 fresh chive sprigs, finely chopped
- pinch of salt
Method:
Cut your wedge of blue cheese into smaller chunks. Chop 1/8 of a red pepper into small pieces, and finely chop the fresh chive sprigs. Add all of the ingredients to a food processor, and blend until smooth (about 2 minutes).
Yields about 1/2 cup/4 ounces of dip
