I love cheese.  In Korea, I don’t get it very much, since the products at stores are typically plastic and the real stuff is expensive.  When I do get it, though, I have to do something fantastic.  J whipped up a delicious cheese fondue, perfect for dipping vegetables, chips, crackers, and whatever else you want.  Enjoy!

Prep time: 1 minute

Cook time: about 10 minutes

Ingredients: 

  • 500 mL milk
  • 100 g cheese – you can use pretty much any kind you want, as long as it will melt
  • 2 green chillies, very finely chopped
  • handful of cherry tomatoes, chopped into eighths
  • 1 tbsp flour
  • 2 tbsp olive oil
  • 4 garlic cloves

Method:

Heat olive oil in a large skillet over medium heat.  Once heated, add flour and stir frequently.  After a paste-like texture is formed, add chillies, tomatoes, and garlic.  Cook for a few minutes, then add milk, stirring continuously.  When the sauce has thickened up, add small pieces/shreds of cheese.  Continue to stir until a cohesive dip is achieved.

Yields 1 bowl
