Oatmeal (porridge) is one of my all-time favorite breakfast and comfort foods. It’s a quick and simple fix on a cold day, and can easily be made at home or while on the road. All you need is a pot, a spoon, and some heat. Enjoy!

Cook time: 5 minutes
Ingredients:
- 1/2 fresh banana, sliced
- 1/2 c/ about 50 g dried oats/porridge/oatmeal
- 1 tbsp chunky peanut butter
- 1/2 c soymilk
- 1/2 c water
- 1 tsp butter
- pinch of nutmeg
- pinch of cinnamon
*For a vegan option, use less than a tsp of oil in place of butter, or don’t use at all.
Method:
Melt butter in a small pot over low heat. Add thinly sliced banana and sprinkle a bit of nutmeg and cinnamon. Saute for a minute, stirring a few times to avoid sticking. Add oats, water, milk, peanut butter, and more nutmeg and cinnamon to taste. Increase heat slightly and stir frequently for about 4 minutes or until desired consistency. Porridge should be thick and creamy, and all liquid should be absorbed.
Yields 1 serving
*For added flavor and texture, consider adding a handful of raisins or berries.
