Life in a small town on a tiny Korean island means that your international dining options are fairly limited. Foreign ingredients are pricey, but some friends and I decided to splurge on a Mexican-themed potluck night. Of course, you can’t have Mexican night without some “south-of-the-border with a Korean twist” themed cocktails. Soju is the spirit of Korea and, at a buck a bottle, you’ll have extra cash to buy more olives.
Prep time: none
Cook time: 5 minutes
Ingredients:
- 2 liters of orange juice
- 2 bottles of soju
- 2 handfuls of blackberries or blueberries
- 4-5 tablespoons sugar
Method: Bring berries and sugar to a simmer over medium/low heat. Pour orange juice and a shot of soju in a glass first, then add a tablespoon of your berry grenadine.
These amounts yielded enough cocktails to satiate a group of 6
Wow this makes me want to give Soju a 120th chance (I always swear off it!!) Would love it if this does not give you a Soju Hangover!!
Haha yeah I hate soju, too, but I seem to keep getting sucked back into it because of how cheap it is! It’s actually really tasty in this cocktail. Just be prepared to devour a whole plate of nachos to yourself after a few![:-)]()

This is so easy and sounds really good. We usually have frozen berries in the freezer, so I’d already have everything to make this except for soju. It’s too cold for soju cocktails, but maybe in a few months! haha
