Although living in Turkey allowed me to be introduced to loads of amazing dishes, I found myself missing a homemade-style jam.  They have a variety of jams and preserves in Turkey, but with loads of added sugar, they just didn’t feel “as good” (on the tummy) as the kind Grandma always made.  I experimented until I found a simple recipe that worked for me…I hope you like it, too!  *Note: If you prefer a sweeter jam, just add more honey, or give in and add sugar.

Prep time: 2 minutes

Cook time: about 15 minutes

Ingredients:

  • 1 kilogram fresh organic strawberries, sliced
  • 1 tbsp organic honey
  • 1/2 freshly squeezed lemon (adjust for your acidity preference)

*Change strawberries with any other fruit for variety.  Plums are excellent, too.

Method:

Remove tops of strawberries and slice into halves or quarters, depending on size.  Place strawberries into a large pot and cook over medium-high to high heat, stirring frequently.  When berries have begun to burst and secrete thick juice, add honey and lemon juice.  Continue to stir frequently to avoid berries sticking to the pot.  Reduce until you achieve the desired consistency, then spoon jam into a glass jar.  Allow to cool before refrigerating.

Yields about 13 oz/370 grams
