Veggie burgers are an awesome thing to have at a barbecue, when everyone is sitting around talking, drinking, and cooking on the grill.  However, they are a bit time consuming.  While I was in Slovakia, my friend taught me this quick and easy way to make a vegan sandwich filler.  You can also chop it into pieces and throw it on a salad.  Enjoy!

Prep time: 5 minutes

Cook time: 6-8 minutes

  • 360 g of firm or semi-firm tofu, coarsely grated
  • dash of soy sauce
  • 3 cloves garlic, crushed
  • 75 g of breadcrumbs
  • flour (for binding)
  • pinch of dill (more to taste)
  • salt and pepper (to taste)
  • 2 tsp olive oil

Quickly rinse tofu, then grate coarsely into a bowl.  Crush 3 garlic gloves and add to bowl.  Add soy sauce, breadcrumbs, and seasonings to the bowl, then mix with a spoon.  Add flour pinch by pinch until you are able to form sticky patties.

Heat oil in a large saucepan over medium heat.  Place patties in the pan, and turn over after a few minutes/when golden brown.  Top with veggies and condiments of your choice-I recommend hot sauce and onions-and eat on its own or as a sandwich.
