A few days ago, I posted about cooking with zucchini noodles.  I’ve really been digging the ease with which you can make them and the number of potential sauces that you can top them with.  Plus, eating vegan always makes me feel better.  Spicy peanut sauce has always been one of my favorite condiments, so tonight I went for that one.  It’s super easy to make and even though it involves minimal ingredients, it definitely doesn’t disappoint.  Try it out!

Prep time: 2 minutes

Cook time: 5 minutes

Ingredients:

  • 1/2 zucchini, shredded into long noodles
  • 1 handful brachen (fiddlehead ferns)
  • 2 garlic cloves
  • a few fresh cilantro leaves, chopped
  • 1 tbsp peanut butter
  • 2 tsp olive oil
  • 2 tsp soy sauce
  • 1 1/2 tsp sriracha

Method:

Heat olive oil in a small pot.  Add garlic, brachen, and zucchini noodles.  Allow to cook for a few minutes, then melt peanut butter over the mixture.  Add soy sauce and sriracha, and stir together.  Top with cilantro and serve hot.
